This dish originates from the Alsace and consists of a thin crunchy crust made of flour, water and a little salt, with the healthy crème fraiche version Bibbelliskäse on top. On this go several toppings where you have the choice of meat, fish, vega(n) and sweet. "But don't call it pizza," says owner Harold Nielen. "Apart from the fact that it has a round shape with toppings, the flammkuchen is something completely different.”



The flammkuchen is served in two different sizes and comes on a wooden paddle-shaped board.


Harold is no stranger to the Eindhoven hospitality industry. After many years of having a café at the location of Miss Paddle, it was time for something else. "I wanted to start a new concept. Eindhoven is growing and its inhabitants come from all over the world. There also needs to be a variety of restaurants to go with this change." During a trip with the Food Inspiration Pioneers, a network of innovative food professionals, Harold found the inspiration for his new concept. "On top of a lighthouse, someone made flammkuchen, very special. I tasted it and was immediately sold."

Products from Alsace

The flammkuchen is served in two different sizes and comes on a wooden paddle-shaped board. That explains the name of the business. "The flammkuchen is traditionally served on a board. Most people order different kinds to share, but they often leave the choice to us and want to be surprised. The crusts are made in the Alsace and we also get the Bibbelliskäse from there. We want to keep it as authentic as possible." The toppings fit the seasons with, for example, asparagus in spring and mushrooms and truffle cream in fall. "And then there are the sweet varieties that our guests like to end their dinner with."

Beers from Brabant

There is also an extensive beer menu with only Brabant brewed beer. You can almost call it a beer magazine. The booklet is full of explanations about the beers and stories of the brewers. "I have personally met all the brewers we work with and I want to share their stories with our guests. Just like us, they love their products. All the different possibilities with flammkuchen and the different types of beer, ensure that we can offer very nice taste combinations." On the menu, you will find the beer that best suits each flammkuchen. That makes choosing a bit easier.


Anyone who remembers the building from when it was still a bar will wonder if they are at the right address. Harold and his team have transformed the dark space into a modern and bright café with custom made furniture. "The ceiling in the back room was removed and we put windows in the pitched roof. Resulting in a space with a lot of light. One of our employees made a large mural with visuals of all the beauty that Eindhoven has to offer. You notice something different every time you see it." Miss Paddle is also perfect for having a drink. "But with flammkuchen instead of the Dutch bitterballen. We also have a lot of board games and shuffleboard." All the ingredients for a pleasant afternoon or evening.
